Like several other brick-and-mortar restaurants in the area, the Proper Pig started as a food truck and now served its slow-cooked meats on Lakewood’s main drag six days a week. With brisket, ribs, turkey, pork and sausage served as platters or sandwiches, and not much else (slaw, potato salad, pickles), this is one more place that’s an old-school meat-lovers delight — a pushback against the growing number of vegetarian choices. And, like a real BBQ joint, it’s ultra-casual and not terribly expensive. And you can still find them at food truck events.
