Rhubarb isn’t a vegetable that’s a regular part of meals in most homes. In fact, most people — even vegetarians — will scratch their heads when they find it in their CSA share. (They probably pass it by at the grocery in favor of more familiar favorites like carrots, beets and squash). If they’re familiar with it at all, it’s probably because they had a rhubarb pie at some point.
The Cleveland Metroparks’ Garfield Park Nature Center aims to dispel some of the mystery around rhubarb, which will start appearing in farmers markets soon. Their Veggie of the Month workshop/lecture will talk about what it is, how it’s grown and how to prepare it, and guests will have the opportunity to taste it before they go home, armed with the knowledge to plant and cook their own.
