Author of “How We Eat” Talks About New Ways People Are Approaching Food

The future of food has been a topic of discussion for years, discussed in seminal books such as Michael Pollan’s 2006 The Omnivore’s Dilemma, Eric Schlosser’s 2001 Fast Food Nation: The Dark Side of the All-American Meal, and even further back, Euell Gibbons’ 1962 volume on foraging, Stalking the Wild Asparagus. We’ve heard conversations about how beneficial — or dangerous — genetically modified crops can be, and heard about the real dangers of monocropping — growing vast fields of one kind of crop.

Author Paco Underhill has added to the discussion with his new book, How We Eat: The Brave New World of Food and Drink. In it, the author, a researcher in people’s habits, looks at ways individuals, groups, businesses and organizations are discovering new ways to approach food, in farmers’ markets, rooftop farms, and supermarket parking lots. He even looks at how marijuana growers have created growing methods that can be used to grow food.
