Cleveland Chef Jeremy Umansky Talks About Building a Better Food System

Jeremy Umansky has made a name for himself as the chef-owner of Larder Delicatessen & Bakery in Ohio City’s Hingetown neighborhood, which he founded with his wife Ali La Valle-Umansky in an old firehouse building in 2015. But his fame has spread outside Cleveland: he’s been nominated for four James Beard awards between 2019 and 2023. And he’s become a vocal advocate for sustainable food concepts including foraging and fermenting, embodied in his 2020 book Koji Alchemy: Rediscovering the Magic of Mold-Based Fermentation.

Umansky will talk about his food journey at the City Club’s series of outdoor forums on the US Band Plaza at Playhouse Square. He’ll explain how traditional food sourcing and preparation processes derived from many cultures such as indigenous and African-American communities can lead to healthier diets than the ones created by today’s heavily processed industrial food system.
