I’m not sure what the point of a turducken is, but then I guess I’m not supposed to because I’m a vegetarian. It’s described as “a dish consisting of a deboned chicken stuffed into a deboned duck, further stuffed into a deboned turkey. Please pass the cranberry sauce.
Apparently a process called “tunnel boning” is essential to do this, so this week’s cooking demo at the Coit Road Farmers Market will feature market manager Kevin Scheuring showing how to do this process, in which all the bones are removed from the center leaving the bird intact. He says this can be used to make dishes other than turducken and you can learn some knife skills as well, essential to all cooking. And fortuitously, Kevin given up his former business Spicehound in favor of selling good-quality cooking knifes inexpensively.
And while peak produce season is long gone, you’ll want to visit the market for storage vegetables, greens, baked goods, and value-added products.
