Soon enough and with a little luck, you gardeners and CSA members will be drowning in your bounty. You just won’t be able to keep up with the ripening harvest. So if you haven’t explored canning —how our ancestors put up food for the winter — now is a good time to start.

The Countryside Conservancy is sponsoring a workshop on how to preserve all those tomatoes and peppers and eggplants and zucchini. It will be conducted by local food expert and cookbook author Judi Strauss of the Charmed Kitchen. She’ll cover the basics of canning, as well as preservation by freezing, drying and pressure canning, sharing what works best for what kinds of produce.

It takes place at the Old Trail School in Bath. The fee is $30 per person.
