Cara Mangini Talks Vegetables for CVNP Countryside Conservancy

Chef Cara Mangini is a crusader — and her cause is vegetables. From the Bay area where fresh vegetables are available almost constantly, she became passionate about the idea of flipping the old American meal template so many of us grew up with, where every meal centered around a hunk of meat, to make vegetables the star attraction.

That, of course, depends on starting with quality produce and preparing it properly, the topic of her book The Vegetable Butcher: How to Select, Prep, Slice, Dice, and Masterfully Cook Vegetables from Artichokes to Zucchini.

Mangini, now owner and executive chef of Little Eater in Columbus, will be in town this weekend to spread the veggie gospel. On Friday evening, she’ll do a presentation on “The Art of Vegetable Butchery: Seasonality and Versatility,” talking about how to grow, cook and eat seasonally. It takes place at Ben Bebenroth’s Spice Acres farm at 7pm with a reception with cocktails and appetizers provided by Spice of Life Catering at 6. Tickets for both events are $50; for the presentation only $20.

The following morning, Mangini will be at the Countryside Farmers’ Market at Howe Meadow demonstrating how to prepare and cook the produce available at the market. The presentation starts at 10am, and she’ll hang around afterward to sell and sign books and talk with visitors about vegetables.
