Dave Lombardy opened the first Dave’s Cosmic Subs in Chagrin Falls in 1997 with a distinctive ’60s hippie flavor. It’s since expanded from that single shop into a mini empire of rock ’n’ roll flavored sandwich joints. Taking a cue from the Hard Rock Café, the shops are crammed with rock memorabilia and photos, with a heavy emphasis on the classic rock era. The ingredients on the sub sandwiches are laid on bread baked fresh in the stores throughout the day and slathered with one of Dave’s proprietary sauces. The menu’s strictly subs — but there are 30 diverse choices, plus kids’ subs for those with limited appetites.
